Shrimp / Prawns fried rice
Ingredients needed for the Shrimp / Prawn Fried Rice:
1 cup shelled prawns/ shrimps
1 onion chopped finely
2 spring onions, chopped finely
2 to 4 eggs ( as per your taste )
1/2 cup fresh green peas, (to be shelled and boiled separately)
2 cups rice ( Long grained would do better )
4 to 5 tablespoons oil for stir-frying, or as needed
Ingredients for the Marinade:
1 tbsp oyster sauce, or to taste
1 tbsp soya sauce, or to taste
Salt to taste
Pepper to taste
1 teaspoon corn starch mixed with 1 1/2 teaspoons water
How to prepare shrimp / prawn fried rice:
Wash, clean and devein the prawns. If they are small leave it as it is. If they are of the bigger type, like jumbo prawns, chop them into smaller pieces.
Beat the eggs slightly with a little salt. Heat enough oil in a fry pan and scramble the eggs. You can also make omelettes and cut them into strips if you like.
Heat oil in a wok / fry pan, add the chopped onions, spring onions , diced ham and the prawns.
Cook in high flame till they are done.
Add green peas. Remove the contents of the pan and keep aside.
Heat the wok again and add the cooked rice and stir well.
The oil should coat the rice and each grain should be separate.
Add the prawn mixture to the rice and mix well.
Cover and simmer for 2-3 minutes or till everything blends well and a nice aroma comes up.
Spread eggs on top of the rice and toss well.
Serve, garnished with chopped spring onion leaves.
