How to prepare ginger garlic paste?

Ginger and garlic pastes are needed by all for daily cooking. It would be easier for you to grind and keep them in the refrigerator for easy use. If handled right these pastes will stay for about 3 months.

Ingredients needed for the garlic paste
1 cupful garlic flakes
1 tsp vinegar
Salt optional

How to prepare Garlic paste?
Clean the garlic flakes and peel. Take about a cupful of the flakes.
In a mixer bowl, put in the garlic flakes and grind without water.
If needed push it and mix it well with a spoon  while grinding to get a smooth paste.
Once done add the vinegar and mix well.
Remove from the mixer bowl and store it in an airtight container  in the refrigerator.

How to prepare Ginger paste?
Ingredients needed are very simple, that is
200 grams of ginger
1 tsp vinegar as a preservative.

Wash the ginger piece and clean it properly of all the mud and the impurities on it.  You need not peel the skin off the ginger as the skin has its own nutrients.
If you need to you can scrape off the skin a bit if you like.
Cut the ginger in to small pieces, you need not chop or mince it.
Put the ginger pieces in a mixer and grind it to a paste. You will have to push the pieces down in the mixer bowl for it to grind properly.
Do not add water to the ginger as the paste will lose its shelf life if you do.
After you grind the ginger add the vinegar and give it a round. Mix well .
Remove and store in an air tight container in the refrigerator.

Points to Note
You can add a little salt also if you like but then you will have to remember that while cooking.
Always  use a clean spoon to take the paste when you need it while cooking, just like the way you use for pickles.
The paste will stay for about 3 months in the refrigerator, if you handle it right.
