Lobia / Black eyed beans curry

Ingredients needed for Lobia  / Black eyed beans curry
2 cups Lobia / Black Eye Beans
1 1/2 tsp chilli powder
BlackEyedPeas.JPG1 1/2 tsp coriander powder
3/4 tsp cumin powder
1/2 tsp turmeric powder
Salt as per Taste
2 tbsp oil
1 small onion, chopped
2 large cloves garlic, chopped
1 (3/4-inch piece) ginger root, peeled and chopped
1/2 tsp Scant cumin seeds
1 medium tomato, chopped

How to prepare Lobia / Black eyed beans curry?
Soak Lobia / black eyed beans overnight with enough water to cover the beans. Later drain the beans, cover again with fresh water and bring to boil. You can also use a pressure pan.
Add salt, coriander, cumin and turmeric powders to the beans and simmer after the first whistle. Cook for about 5 minutes and put off the fire. When the pressure pan gets cool, open and check the contents. If it is not cooked soft, simmer on fire till it is done.
Now heat oil in a deep saucepan, add onion, garlic, ginger and cumin. Saute till the onions turn golden and add tomato. Cook till the tomatoes get soft and mushy.
Now add the lobia (black eyed beans) plus the boiling liquid in to the saucepan. Simmer uncovered till lobia gets soft but
not completely dissolved.
The curry should be soupy and can be had with Chappathies, Phulkas etc.
